Project Toolpath onto 3D Model

why not not use "Project Toolpath onto 3D Model" on all 3d projects?

Because it depends on the project and the toolpath. If you're cutting the outside perimeter of a model to cut it out, you definitely do NOT want to project the 2d toolpath on the model because you want it to cut through the material evenly. Same thing if you're cutting a mortise. It really depends on the purpose of the 2d path and the look you need.

Best/most frequent use of project toolpath is text on a model.

Only on a couple VERY SPECIFIC occasions did I use it on anything other than text on a model.

Since 3d projects have a model to start with, projecting is for adding 2d vectors to the model, most commonly, lettering. So unless you have the specific need, you wouldn't often use it unless most of your 3d projects also involve lettering.

Also, using it where it isn't warranted or appropriate can produce undesirable or unwanted results.

On occasion I've created simple 3D components such as wedges to then map pocket or profile toolpaths to. The actual part was a flat board that was clamped at an angle to match the wedge. This has been for student lighting or woodworking or furniture projects that had parts that needed connections at non-90 angles. There was also another thread where V-carved or profiling with a v-bit needed to ramp/dive into a surface. A slight 3D wedge let the toolpaths be mapped so they would do just that. The 3D models were ignored/deleted after the mapped toolpaths were created.
