Hello!
I'm having a weird problem with the V carving operation.
For some reason the operation goes outside the selected vectors. Sometimes its fine, and sometimes it decides to make an extra cut somewhere outside the line.
First image: Just as i want it
second image: same file, same operation but rotated 90 degree. somehow it goes wrong
third image: here you can see the line going outside the vector.
It must be a simple fix but I can not find it at the moment.

Almost certainly going to be a vector loop or crossover. Try the Vector Validator tool to see if shows a problem otherwise you'll need to attach the file so it can be looked at to get to the bottom of it.
Problems like that do come and go depending on the orientation of the vectors in question.

I expect there is a duplicated node or some such in there but there are so many nodes on that S it's hard to tell without spending a lot of time dragging. I used the Fit Curves to Selected Vectors tool to reduce the node count and it was fine then.

I already did the fit curves function but not enough I think.
For me the problem is also gone when I redo the fit curves function.

I can't see anything wrong but when I 'toggle toolpath' to solid it shows your extra cut. I copied your file and pasted it into a new file it previews just fine.

I created a cut down version of the file with just the offending S and Vectric identified the issue as being a couple of flat arcs in the bottom of the S. Those should have been lines rather than flattened arcs and was tripping the toolpath up in certain orientations. Fit to curves (I did beziers) removes the flat arcs automatically but they could also be removed by node editing, other variations of the Fit to Curves tool, offsetting/insetting etc.
