Carve (Contour) using large then small bits

When we first saw the Aspire software we saw a demo of someone caving an eagle. He first used a large ball nose bit. He then setup a tool path for a small ball nose bit. It originally calculated a complete redo of the entire eagle, then he selected something and it took out all the tool paths that the previous large ball nose had been able to reach and only left the tool path for a few small areas that the large ball nose could not reach. This was to reduce the total machine time. It looked so easy I thought when I got home I could do it again but, so far I have never been able to figure out how he could just find the tool path for the spots the first large bit could not reach.

Can anyone tell me how to do this, or point me to some help files.

I believe you're referring to a process of Rest Machining
