Hi all,
I am doing a cutting board the top side will be a standard Zank inlay.
The bottom will be a 2.5 D carve from D&M should I use a dish or recess model.... never used a recess model before.

It's an artistic choice really. A recessed model is designed to mimic the look of hand cut chisel edges to the recess in which the model sits and the dish is a perfect concave shape which the model sits in.
My personal preference from a pure machining point of view is to use dish models as you can often get away without a roughing toolpath with those which can speed up machining enormously.

I've never done either type as anything other than oval or circular.

Just curious if this is for your concept cut with a clear resin fill?
Just wondering how resin would be on the shallow edge of a 3D dish where it would feather out?
IF resin, then maybe take the Outline Vector and Offset inwards for a deeper edge?
Maybe Level Clipping,
and making sure model top is recessed a couple mm to avoid skimming/sanding top of model.
If you bought the flat model, then you could use it with Dome/Dish clipart for different effects?

Not sure if you have Aspire or not, but if you do there’s no reason to limit yourself to domes and dishes. Almost any shape works as long as you get the model set correctly.

Yes have almost finished the topside Zank inlay... just final sanding.
The underside will be a model of a cowboy roping a bull... still in the planning stage, not sure about the dish.... may use a rope border around the lip of the dish... may carve and the decide about the resin fill. Material being used.
Border - spotted gum thickness 30mm using the Tailmaker Joints
Center area - river redgum
Inlay main area - wenge
