What is a good color for the "sides" of a picture, carving or lettering?

What is a good color for the "sides" of a picture, carving or lettering?

I made a few various pics and lettering type fonts on light wood, pine and poplar. I finished the tops with various colors. I did nothing to the sides. What would be a good "neutral" color for the sides? Should I leave it just the wood grain and sand it, or apply a dark stain and sand smooth?
