Ok, in the interests of making something other than sawdust, I thought I'd have a go at engraving marble.
Slab of white marble 400x300x15.
Bit was a 90 degree carbide bit (my favourite bit - which is one of these

Max depth per pass 0.5mm,
Stepover 5%, Feed rate 50" per min.
DeWalt router running on speed setting "4".
Cut dry (my MDF wasteboard isn't waterproof).
The whole job took approx 30 mins to carve. Minimal dust - my rudimentary dust collection system worked perfectly. Also there is no sanding or clean-up required.
The cut was then filled with black=tinted, 2 part resin. I think I preferred the raw, unfilled version, however as a cutting board or cheese board, I suspect it'd quickly fill with gunk.
