Bit selection conundrum

I am looking to do a two sided lettered cutout for a beer tap pull for a friend. Essentially a vertical lettering that will be mirrored on the alternate side and cut out on the contours of the letters. Trying to figure out the best bit / cut type to do the letters. I assume I would use an end mill to do the final cut out. Should I do it as a Vcarve or pocket? If pocket, it seems to need a 1/16” mill to ensure the letter detail. If I go to 1/8” Varve seems to show that it will not cut the detail and previews what looks like a bunch of blobs. ?? If I do it as a Vcarve will a 60 degree work ?

Perhaps some images of what you have already done might help people visualize what you are trying to accomplish? Even if they are what you might consider to be "failures".
