Using V-Carve Engraving Toolpath w/o flat area clearance

The effect I am trying to achieve is to get the rising serif cut of the Engraving Tool without doing the flat area clearance. I want to put a chamfer or roundover on the edge of a through-cut that includes two converging arcs. The convergence produces a space too small for the router bit to clear out, but if I could use a V-bit to produce the ever-shallower cut associated with engraving serifs on letters, it would look fine. Doing a Profile Cut with a V-bit produces a constant depth cut which produces a rounded cut at the end of the arc convergence, instead of the nice sharp point produced by engraving. If I could just "engrave" the outline of the profile I just cut without the flat area cut, all would be well. Any to turn off the flat area cutting?
