This is how far it goes for me , but a west system finish would finish it off (2 part epoxy coloured or clear ), edges sealed first
It needs a bow and stern piece , red oak keel, cockpit moulding and some floor boards

A colored epoxy sounds fun! I would probably opt for a sort of translucent green or blue (I have a slight bias to those colors as they would be similar to a couple hand-made wooden canoes we had at the family Camp in Maine).
