When I put font on a wood I use a 60 degree V bit. It always looks "too deep". If I adjust the height it becomes unreadable on the project. I want the look of "drawn on" not "carved in" hope that all makes sense. Any advice?

Lots of options but only you can tell which one is the look you want.
A single line font with a profile toolpath set to be On the vector with a small ballnose will give a more drawn look.
You could also experiment with the v-carve toolpath with v-bits and ballnoses with a shallow flat depth. You could use non-single line fonts with that.
That's just two ideas out of many.
