I have a couple questions about using draft on models. First if you have a couple models in your project but want one to have a draft, is this possible and two ,if yes, how do you do it? Second is it possible to use a draft on one portion of a model and not elsewhere? Really appreciate any help.

Draft applies to the visible model - it creates a new component with the draft applied to it. So, the easy way to deal with draft on some parts but not other parts of the model is to turn off visibility of the components you don't want to have draft by unchecking the box next to the name of the component. Only leave the components that should get draft.
If you have a component where one part should get draft and another part shouldn't, then you'll need to split the component. Draw a vector where you want to split the component, select the vector and the component, and click on "Split the selected component using a vector". Turn off visibility to the component you don't want to get draft.
