where i am having trouble is modeling the cut
the tool paths are easy to deal with

It looks like you could take what you have and use the sculpting tool to smooth the transition.

As is usual with Vectric products, there are at least 3 different ways to approach the problem. Besides what is shown below, this could also be done using the fluting toolpath, or the moulding toolpath.
I started with an outline of the instrument body shape. I created a 3D component of the desired thickness using Create Shape from vector outlines Next I selected the shallow dome/dish clip art I set the dish component with a base height and the dish depth

Next I baked the two components together
Then I used the sculpting tool to smooth the edges.
This is the quick-and-dirty outcome. More sculpting would yield better results.

That will work fine,
a little hand shaping once it is cut but thats ok, i will keep messing with it until i have it right!!

I use the molding tool path for this operation on my guitar bodies.
