Rephrasing my question ...
What I am interested in is the best method of engraving an intricate design onto the brass or copper workpiece.
I would like to select a piece of artwork then transfer this design onto my workpiece leaving the design "high" and milling away the parts of the design that I wish to fill with the normal coloured glass fine particles ... prior to firing in an enamelling kiln.
Sort of the reverse of engraving!

The pocket and v-carve toolpaths will both remove material in that way. Depends on how you want the edges going down into the recesses to be finished.

Good question! ... my initial thoughts would be straight sided ...
What I will be doing is to first give the whole of the brass plate a thin coating of background enamel then very carefully fill the design spaces with a selection of colours.
I have seen this done on a Utube demonstration
