How so I set the minimum depth of cut on a design and make 3d carve. When I do a "preview" it looks like design goes all the way thru in some area?

3D finish toolpaths always contact the surface of the model in “one pass”. You limit them from cutting “over the edge” by using the Selected Vector option. The vectors to limit the cut, I believe, are provided with the D&M models.

You can position the project in the material using the "Set" button on the toolpath tab. Use the slider or type in values.

Since the file will contain copyright data & can't be shared the next best thing is to post some screenshots of your settings which will make it easier for people to help
You can use the built-in windows snipping tool to copy the screenshots which will give a clearer image than that taken using a mobile phone
