Good day.
I have a few v groove bits that are about 1/2" height but the material I need to cut into is about 3/4"
What would be the best way to do this in vcarve in multiple passes to accomplish this?

I do not think your V-bits will protest if going lower than their size.
It will just mean they have more work to do and they will do it in multiple passes. If you want to reduce job time - or give the poor bits a break - just use a conventional bit for clearance (default option in VCarve Pro anyway). Considering your drawing it might not be larger than a 1/4 inch.

Going deeper into the material is not the issue but cutting the sides as well.
I will order some bigger bits but I have a few of the smaller ones might just use them.
So what is the best way to do this in vcarve?

Use the v-carve toolpath or chamfer toolpath.

I managed to do this with 3 separate toolpaths. by offsetting the line 2 times on both sides.
I am guessing this is the only way to do it?

Or you could use the Chamfer toolpath or the V-Carve / Engraving toolpath. Or if your VCarve version is too old for the Chamfer toolpath you could use the Chamfer gadget.

Not really. But it is creative. And might work. But what one normally (sorry) would do is take your center line, offset this with two lines on each side with exactly the depth of your cut as offset distance and run a V-Carve toolpath with a 90-degree V-bit between the two offset lines.
Centerline is black, cut made by offset lines is dotted purple. I hope I am any close to being clear. Vectric video's will do a lot better, methinks.
