It looks like VCarve is generating the right paths, based on what I can see and Adrian's analysis of the g-code. You are getting 2 passes, one at 1/16" below the start depth and the other at 1/8" below the start depth.
So, for VCarve 1, with start depth of 0 and flat depth of 1/16", you get 1 pass at 1/16"
For VCarve 2, with start depth of 1/16 and flat depth of 1/8", it starts by plunging 1/16" below the surface (because it assumes you've already removed 1/16") and then cuts 1/16" below that (or 1/8" total), then another 1/16" below that (or 3/16" total).
If you run VCarve 2 before VCarve 1, then yes, the bit will plunge 1/8" into the material to start.
If that's not what you're seeing in real life then there's some other problem.

Ah, I understand now. I had to read it again. Now I just have to figure out what happened to break the bit. Although I may never know. I won't rule out that it was something dumb that I did. I appreciate all the help!!!
