International Cheese Board

Hi Guys,
I was just checking the toolpaths and I have a question, the V Carve toolpath has a start depth of 0.0 and no flat depth, how does the V Bit know how deep to cut?
Am I having a "seniors" moment?

All I could think about it was a discussion about some international organization that regulates cheese. What in the heck did that have to do with Vectric software?
