It's because you're using a start depth combined with a cut depth that is less than the radius of the bit. You can change both of those if you want but in the case of the 3D you will lose some of the new functionality. In both cases you need to go to Options on the Edit menu. It's part of the text tool now. If you have the text tool active then the kerning, spacing and curve functions are all active as though you were using the old tool.

If you could provide some pictures of what you're seeing it would help to offer some ideas. I still don't understand why you're seeing a difference between a profile toolpath and a pocket toolpath. As said above kerning has been combined into the Text Tool. The separate tool has been removed. All works the same as before you just have to have the text tool active. Personally I never used it so I don't miss it. I draw straight lines between major points and then select everything in node edit and press S.
