Ah, martin is right about nesting not being available in Desktop. Looking at the documentation links here I selected Desktop but saw the “Plate Production” icon and mis-interpreted that as Nesting. Oops.

If you are using a 3D finishing toolpath you can’t "cut deeper” (make the details such as the stripes deeper) as the toolpath will always ride the bit on the model. The only way to “cut deeper” is to make the differences in Z between each surface larger. And that by scaling the z-height of the model...

I’m not sure that you’ve provided enough information in the question. Creating multiple toolpaths is trivial just keep clicking on the roughing toolpath icon. You could create a dozen if you really want to.
