Press N to go into node edit. Then change the start node (green node) on the vector that you want to cut the opposite direction by hovering over the node you want and pressing P.

I still enjoy a handcut dovetail. But I make them so the tails are just a saw kerf apart so you KNOW they were made by hand (not possible on a machine). Resize your original vector slightly larger so it covers the incorrect pocket (if possible). Then recut the female pocket and the male inlay properly, so they fit exact.

You can profile the inside of the mortise outlines and map them to a 3D surface. They will still have radiused corners to deal with, and stepped/arced bottoms.
