I did use a bowl bit for both the roughing and finish pass more than once and it worked out ok. Nothing borke...

As Michael says it's exactly the same as doing it manually on the CNC but using a pocket toolpath. If using a raster strategy then make the pocket toolpath larger than the slab so that the bit turns around off the material, this will help reduce tool marks.
