I have only done barley twists on a manual ornamental mill, using several of the Magnate bits. You might want to look at the manual cutting instructions and see if there is some insight that might help.

Poplar has always been a favorite. The biggest reason was for the longest time I had more poplar than I could ever use. Add a helical aspect to the gear and you'll get smoother power transmission through all speed ranges.

I used the Mathias Wandel gear generator from woodgears.ca and imported them into aspire with success. My gears were from 6 inches to 20 inches in diameter.

V bits work great, end mills seem to work better because no grain to worry about. Can be messy, and needs good dust collector
