I don't know about that whole print/take pic/import pic thing, but you could try:

What do you mean by "it still showed me the old text". Where? Are you seeing text you thought you deleted, or are you seeing arrows and lines that show a toolpath you thought you deleted?
Maybe a screen shot or two would explain it better.

That was just a lousy trace. Your best bet is to try again - use a sharper starting image, adjust your trace settings, or trace by hand.

If I understand you correctly: You think you put some text on layer2, and some other text on layer 3. But when you look at layer 3 it is blank, and when you look at layer 2 you see the text you put on layer 3. how do I vary the speed from the end of one pass to the beginning of the next pass? If you're talking about the movement where it's not cutting, that's the rapid move and it's determined by whatever max speed/acceleration you've set for your machine. you just trace the bitmap and then you can do whatever you want with the vectors - cut in/out/on, v-carve, pocket etc.

Maybe a ghost in your machine? I saw what you were talking about when I did the preview in slo-mo, but when I recalculated the paths it went away. (attached, but I don't know if a 7.5 version will open an 8.5 file.)

Nope. It's gone unless you can get it out of the trash can. If you google around there used to be quite a few utilities that would try to undelete deleted files from the trash. I don't know if any are free or not or how effective they are. Depending on the complexity of the file, you can try g-code ...

What do you mean by "add them together somehow" ??
Do you just want to take two pictures and combine them into one picture, or do something with two pictures to get one set of vectors for cutting?
