if you hover over the guide line and right click it will display the guide line properties, and gives you the option of adding another parallel guide line in a position of your choice

Try creating a vector profile of the canoe, then split it in half (top, bottom). When you say "engraved" do you mean a shallow line drawing cut into the wood? Or do you want a full relief portrayal of the crosses? If so, then there has to be an area that is pocketed around the part in relief (the crosses). If you want the former, go into the model you bought and see if there are...

I only see a model thickness at the top of the headstock of about .55 inches. So that, combined with what Dealguy said, may account for the difference. Also, what kind of stock are you cutting and how is it clamped? If it is "practice pine" and not firmly clamped, the wood may be moving as it is car...

Be aware that with a 2 mm thickness, you might not be able to use most .023 end mills, they are able to cut about 1.75 mm max.
