Tom you can rough it in with the 1/4 and finish with the 1/8th with a small stepover. 1/4 may not be enough depth to get the most out of what is possible

Mark to change the height of the uppermost horse without affecting the others would require that horse to be seperated from the model. Tracing and cookie cutting might be your only option
You can make a circle around the center component (the bitmap) and make a planer shape from it with a height greater then what you currently have, that will raise it up. Make sure you place it at the top of the list in the Component manager.
Anthony, in the same run just make a text box and add your text the same has VCP. when you get ready to Vcarve or profile the text, click the box "Project toolpath onto 3d model" Make sure you have a safe Z when you run the job.
