Hello Richard.
Cut speed etc come down to the tool you use, machine, wood etc,etc, this is mostly trial and error.

There are books in the library 3inches thick just of wood finishing etc. it's not something that you going to learn over night.
I find cutting into hardwoods the best just don't try and cut too fine. i.e leaving <1.5mm of material between two cuts especially while going across grain.
after cutting i give the cut surface a good rubbing with steel wool this seem so clean up any small chips/splinters and end of grain fluff from the product.
I have had good results with Danish oil for finishing it's quck cleans up realivly easily and looks the part too if you have used good wood.
