I picked up a nice STL model off of Ebay. The model is in a dish, but is not centered in the dish. Is there any thing I can do about this?

Here's a few options.
Draw a vector around the area you want to keep and select the trim component option.
OR
Use the sculpting tool #5 with the shift key depressed and "erase" what you don't want.
Then create a new dish...
