Spent some time on searches and looked at FAQ's but can't find how you change the colour of text or lines in a drawing.

Are you talking about in the 2D View? If so you can change the color for a layer.
If you are talking about the Preview Toolpath you can set the color for each toolpath.

You can change the color of text by putting the said text on a different layer with a different color... Pick text, right click, move to layer, new layer and choose color.
If you want to change the color of text in the cut view, you have to grab and cut text or shapes separately and then color them with the machined tool path color and set the color with each operation that's a different color.

Thank you highpockets and speedster. I have not really used layers in any of my projects but I have tried out the text as per your illustration.
It was easy to follow your instructions.
Again with the material, fill and toolpath colours I have in the past tended to leave them and not change.
It's a new colourful world.
