I have the book in the clipart section, I'm good cutting it out and it looks good.
I am struggling with how to get the text to follow the curve of the book.
I've watched several videos of the making the book, but none of them actually show how to add text to it.
Any suggestions would me appreciated.

You'll to project the V-Carving onto the 3-D model.
Just check the box at the bottom of the toolpath window.

Do you have to distort the text or create a curve for text to follow for it to follow the waviness of pages? I have tried projecting the tool path to model and while it varied the depth of cut according to the height of page the text was straight. (i just typed in the text with no modifications) Is this the case and if so is there an easy way to get the text to follow the curves of the pages as in the above video?

"The Reader" Magazine Rack (a FREE Vectric project I created back in 2011) uses both the "Distort Tool" for the text as well as the "Project Toolpath onto 3D model" tool. You can download the project PDF instructions and the project files if you want to peruse a finished example.
Funny story about the hand models...I spent a good 30 or 40 minutes looking for photos on the internet of somebody's hands holding a magazine. Was getting frustrated that I couldn't find anything really suitable...then I remembered...oh yeah, I have hands! So I had my wife take a photo of my own hands and that's what I used as a reference to model from!
