Up Cut or Down Cut Bit

Up Cut or Down Cut Bit

Have never done a profile cut. Just been V carving. I am looking to profile cut completly through 1/4", and 3/4" MDF and PVC Sheet. Should I be looking at getting a up or down cutting bit? I would think up because wouldn't down cutting keep jamming the waste material back into the cut area? Or am I completly off and it has to do with finish sides (top/bottom). On that note, should I be getting a spiral cut or straight cut?
