With the first try I used MDF, however even after staining the contrast was not good enough.
The second try was a complete failure and the third try I used plywood which did have a darker layer beneath the first layer (no staining needed).
This was for me the winning method. However you need align the grooves with the wood grain, therefore I have aligned the grooves vertically.

I would say third time is a charm. Would not have thought to use plywood for that project. I like the layers of plywood for edging some projects, but I've never trusted the layers to be consistent enough to use it for carving.

The plywood is: birch, thickness is 15mm (about 0.59 inch) and consist of 11 layers.
Size of carving is 35x46 cm (13.7x18 inch). With a 15 degree v-carve bit, max depth setting is 3 mm (0.12 inch).
