setting of Z after rough cut 3D

How do I zero out the Z after rough cutting? Can the Z axes be zeroed out on the edge of the material then hit move to x0 y0 to the center datum point.? The datum position is set for center of the material. I know I can use the lower left edge. I noticed that
Jeff Searles leaves his datum in the center of the material.

You can use your control software to move anywhere you like to set the z-zero. Once you run the file the machine will move to the start point defined in Cut3D.
